Ingredients1 Tbls. vegetable oil
3 skinless, boneless chicken breasts, chopped
2 medium onions, chopped
3 medium celery ribs, chopped
1 medium red bell pepper, chopped
1 clove garlic, chopped
4 c. chicken broth
2 c. water
2 large yams or sweet potatoes, peeled and cut into chunks
1/4 tsp. thyme
1 (10 oz) pkg green beans
salt and pepper to taste
Directions
In large soup kettle, heat oil over high heat. Add chicken and cook, stir frying often, until chicken is cooked through (4-5 minutes). Add onion, celery, pepper and garlic and cook, stir frying 2-3 minutes, until crisp tender.
Stir in broth, water, yams and thyme. Heat to boiling, reduce to medium low and simmer uncovered 15 minutes. Add green beans and cook 5 minutes longer or until yams are tender. Salt and pepper to taste.
