Cranberry Yam Bread

Ingredients
2 large eggs, slightly beaten
1 1/3 c. sugar
1/3 c. canola oil
1 c. mashed sweet potatoes (canned or cooked fresh)
1 tsp. vanilla extract
1 c. flour
1 tsp. ground cinnamon
1/4 tsp. ground allspice
1 tsp. baking soda
1 c. chopped fresh cranberries

Directions
Preheat oven to 350 degrees. Coat loaf pan with nonstick cooking spray and dust with flour.

In a large bowl, combine eggs, sugar, oil, yams and vanilla.

In a separate bowl, combine flour, cinnamon, allspice and baking soda. Make a well in the center and pour in yam mixture. Mix until well moistened. Stir in cranberries. Spoon into loaf pan.

Bake for 1 hour or until toothpick inserted in center comes out clean. Let cool completely. Serve with soft cream cheese spread or butter.
