Ingredients1/2 lb. Italian sausage, cooked thoroughly
1 red onion, chopped
1 tbls. chili powder
2 cloves garlic, chopped
1 large can yams or sweet potatoes
1 can beef broth
1 can whole corn, drained
1 c. water
1 small green pepper, chopped
1/4 c. gresh cilantro, snipped
1 tsp. cumin
Directions
Drain sausage drippings and remove sausage to another dish. Cut into thick slices.
In a large saucepan, saute onion in 1/2 tbls oil until tender. Add chili powder and garlic, cut up yams, corn, broth and 1 c. water. Bring to a boil. Add cooked sausage. Cover and reduce heat. Simmer 15 minutes. Add green peppers, salt and pepper to taste. Add cilantro and cumin. Stir to blend flavors.
