Ingredients1/2 pkg (about 5 oz) cheese tortellini, cooked
1 jar (16 oz) marinated artichoke hearts, drained and halved
1 pint cherry tomatoes
25 large stuffed green olives
3 oz. Genoa salami, thinly sliced and halved
1 jar pepperuncini
25 bamboo skewers
Dressing:
3 Tbsp. red wine vinegar
1/4 c. olive oil
4 cloves garlic, crushed
10 basil leaves, snipped
salt and pepper to taste
Directions
In a jar with a tight fitting lid, shake dressing ingredients to blend.
In a large bowl, combine remaining ingredients. Pour dressing over mixture; toss to coat. Let sit up to 4 hours.
Thread ingredients onto skewers, alternating.
Makes 25 servings.
