Ingredients2 c. chopped plum tomatoes
3 green onions, sliced chunky
2-3 Tbsp. canned chopped green chiles
3 Tbsp. balsamic vinegar
1 small minced and seeded jalapeno pepper (optional)
1/4 c. chopped cilantro, fresh
2 Tbsp. olive oil
1/2 tsp. garlic salt
1/2 tsp. ground cumin
fresh ground pepper to taste
2 cloves garlic, chopped
1 can black-eyed peas, drained
1 can black beans, drained
baked tortilla chips
Directions
Combine all ingredients in a bowl. Mix well, cover and chill. Garnish with cilantro sprigs. Serve with tortilla chips.
