Ingredients1 lb. skinless, boneless chicken breasts, cut into small pieces
1 large red pepper, chopped
3 tsp. chili powder
2 tsp. garlic powder
2 cans (14 1/2 oz) chicken broth
1 pkg. frozen whole kernel corn
1 c. cooked rice
chopped fresh cilantro
5 lime wedges
Directions
Spray sauce pan with cooking spray and heat over medium heat for one minute. Add chicken, pepper, chili powder and garlic powder, cook for 5 minutes, stirring often. Add broth, corn and rice; heat to a boil and cook over low heat for 10 minutes or until chicken is done. Stir in cilantro and serve with lime wedges for garnish.
